Basic Whole Wheat Bread Level of Preparation: Intermediate Total Prep Time: 2 Hours Yield: 1 - 9" x 5" Loaf 4 to 5 Cups Arrowhead Mills Stone Ground Whole Wheat Flour 1 Tbsp Active Dry Yeast (1 Pack) 1 3/4 Cup Warm Water (110ºF.) 2 Tbsp Nonfat Dry Milk 1 Tsp Hain Sea Salt 2 Tbsp Honey or Molasses 2 Tbsp Hain Vegetable Oil Pour water into a large mixing bowl and sprinkle with yeast. Allow yeast to dissolve, (about 5 min). Add milk, salt, honey, oil, and 2 cups of flour. Stir well. Continue to stir adding a little flour at a time until dough becomes stiff and pulls away sides of bowl. Turn dough onto floured board and knead 5-7 min, until dough is smooth and elastic. Shape dough and place in oiled 9" x 5" loaf pan. Allow loaf to rise in warm place until doubled. Preheat oven to 350ºF. Bake 45-50 minutes or until done. Select "Whole wheat Cycle" if available, or select cycle that will allow for longest rising and kneading times. Do not use "Rapid Bread" cycle. Stone Ground Whole Wheat English Muffins Level of Preparation: Intermediate Total Prep Time: 1 1/2 Hours Yield: 10 Muffins 1 Package Active Dry Yeast 1 Cup Warm Water 1 Tsp Hain Salt 2 Tbsp Honey 1/4 Cup Organic Raisins (optional) 2 Cups Arrowhead Mills Stone Ground Whole Wheat Flour 1 Cup Arrowhead Mills Unbleached White Flour 2 Tbsp Arrowhead Mills Yellow Corn Meal In a large bowl, dissolve the yeast in warm water. Add the salt, honey, oil, raisins (optional) and the flours and stir until smooth. On a floured surface roll out dough and cut into 3 1/2-inch circles. Use a cookie cutter, the edge of a drinking glass, or a small can. Sprinkle cornmeal on an ungreased cookie sheet and sprinkle the remaining cornmeal over the muffins. Cover and let rise in a warm spot for about 1 hour. Heat a griddle (300ºF); transfer muffins onto griddle and cook over the burner of the stove for about 7 minutes on each side. Keep the flame low so the muffins don't scorch. Cool, split and toast or serve warm with butter and comb honey.
